Carrot Cupcakes and Spiced Nuts!

Hello there!

It’s been quite a day for me…

First of all, I’d like to apologize for my one week late update :((, as I’ve been quite busy lately and I’ve been very stuck on what to make… Also, I’m really sorry that the photos here look so similar to the ones in the previous post, but THEY ARE DIFFERENT!

Anyways, I hereby present to you:
A spiced carrot Cupcake
Maple cream cheese Frosting
Spiced Walnut Garnish

These cupcakes were for a party and my Mum was going to her friends house where they had their monthly “girls night out”, and she left me all alone which was great considering the time I could spend bonding with my dear laptop-basically just sit in my room and ogle at my screen!

This was actually one of the most complicated cupcake recipes that I’ve made and put together, as in there are three different components-I normally don’t bother with a garnish, but seeing as I haven’t updated in quite some time, I think you all deserve a little more effort from me….

Without further ado, here’s the recipe

Ingredients
Carrot Cake
1 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon table salt
1 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 cup granulated sugar
5/8 cups canola oil
2 large eggs
1 finely grated peeled carrot

Method
Preheat the oven to 200 C
Whisk flour, baking soda, salt, cinnamon, nutmeg and ginger together in a bowl
In a separate bowl whisk oil and sugar together till well combined
Whisk in the eggs one by one into the oil mix
In the oil mix, stir in the flour and then the grated carrots
Fill cupcake tins 3/4 full
Bake for 14-18 mins
Cream Cheese Frosting
Ingredients
8 ounce cream cheese
1 and 1/2 tbsp butter
1/3 cup icing sugar
1/4 cup maple syrup

Method
Beat Cream cheese and butter till fluffy
Beat in maple syrup
Beat in powdered sugar
Easy peasily done! 

Spiced Walnut (Mixed Nuts)*
Ingredients
1 egg white
3/4 tsp paprika
3/4 tsp cayenne pepper
1 tsp cinnamon
1/4 sugar
Pinch of allspice
Pinch of salt
Mixture of nuts-250g (Walnuts, Almonds, Pistachios, Cashews- all can be used)

Method
Preheat oven at 140 C
Whisk egg white till foamy
Add in spices and sugar and whisk well
Mix in the nuts so that they are all covered
On a silicon mat on a baking tray, spread out nuts
Roast for 30 mins

*I made the nut spicy, as I thought this will contrast the sweet cream cheese frosting, it might seem a bit weird to you all so you may choose to just coat it in sugar and roast it off to make a caramelized walnut!
