Vegan Banana Muffins

Hello there!


Banana Muffins are very special to me as I remember that they were my starting point in which I began to fall in love with baking! They were the first things that I have ever baked, and I am proud to present this healthy version of a banana muffin!

This Banana Muffin recipe is very basic and could be adjusted to your needs! I went with pecans and desiccated coconut but walnuts, blueberries and various other ingredients could be a great addition to this muffin recipe!

On an extra note:
In the following recipes that I post, I will be posting recipes that do not include milk unless necessary as even though milk contains a high level of calcium, it is actually not that necessary for the majority of adults as scientific research has proven that the sugars within milk contribute to increasing the risk of cancer in humans which can be proven as:cancer is a highly rated killer in western countries where milk is a huge part of a person’s diet compared to Asian countries which have relatively lower rates of cancer that are gradually increasing due to new foods being introduced into their diet.

Here is the recipe for super easy, healthy and yummy banana muffins:

Dry Ingredients:
1 and 1/2 cup flour
1/2 tsp salt
2 tsp baking powder
5/8 cup sugar

Wet Ingredients:
2 medium sized bananas
1/2 cup olive oil
1/2 cup water
2 tsp vanilla extract

1/4 cup chopped pecans
1/4 cup desiccated coconut

Preheat your oven to 190C
Sieve and mix dry ingredients together
Mash your bananas with a fork or potato masher
Mix wet ingredients with better
Mix the wet and dry ingredients together
Fold in the pecans and desiccated coconut with a spatula
Bake for 14-18 mins till a cake tester/toothpick comes out clean
