Revision has been painful since I came back from Tokyo… Honestly I literally want to rip out my hair but anyways…
My mum was talking to me last night about how she didn’t want to eat the bananas that were left over in the fridge but she wanted to eat something made with the bananas! So, I decided to look deep in the kitchen cupboards for my waffle maker and make these Banana Cinnamon Waffles!
These were absolutely amazing as they were light, crispy and not too heavy because of the egg whites which were whipped to stiff peaks!
I took them out to the garden to eat because what better to do than to eat waffles doused in maple syrup and with bananas in the morning sunshine, after days of mind-wrecking revision and horrible weather!
On an extra note, the entire batter made heaps of waffles yet only used 2 tablespoons of sugar! It’s super healthy! Accompanied with a warming mocha ~the starbucks tumbler is my own, which I got from Japan btw~, it’s perfect!
Without further ado, here’s the recipe:
1 cup all purpose flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
2 eggs separated
1 cup milk
1 cup mashed banana-around 3 small bananas/2 medium
6 tbsp butter melted
In a large bowl, mix the flour, sugar, baking powder, cinnamon and salt
In a separate bowl beat the milk and egg yolks
Add the milk mixture to the flour mixture and stir till blended
Preheat waffle maker
Fold in the mashed banana and melted butter
Beat the egg whites till stiff peaks
Fold in the egg whites
Use your waffle maker according to its instructions
Serve with maple syrup, whipped cream, sliced bananas all of your choice!
Next time, I would consider putting in walnuts into the batter!
Makes Enough for 3-4 people
