Chocolate Souffle!

Hello there!

So, a few weeks back, I made a chocolate soufflé which was truly scrumptious! For my first ever soufflé, I think this turned out quite well actually! I haven’t made anything today, which is why I’ve decided to share some of the things I’ve made before! #throwbacktime

Chocolate Soufflé

Ingredients

  • Butter (for greasing ramekins)
  • 3 tsp cocoa/grated chocolate
  • 1 tbsp cornflour
  • 50ml milk
  • 50g Dark Chocolate, chopped (good quality)
  • 20g egg yolks (around 1 1/2 egg yolks)
  • 50g egg whites
  • 25g sugar (caster or granulated)

Method

Preheat your oven to 180°C
Brush your ramekins with butter and coat in cocoa powder/chocolate-roll to give an even layer of cocoa
In a sauce pan, place a little of the milk with the cornflour and heat (slake)
Gradually add the milk into the sauce pan and bring to the boil-for 30 secs
Add chocolate to the milk and whisk till smooth
Beat egg yolks into chocolate mixture and set aside to cool (in a separate bowl)
Whisk egg whites to soft peaks and gradually add the sugar till stiff peaks are reached
Fold 1/3 of the egg whites into the chocolate-mixed well
Then fold the rest of the egg whites into the mixture
Separate the mixture into the ramekins and bake for 6-8 mins

Dust with icing sugar!
